Shabu Shabu / Yakiniku
Shabu-shabu is a hot pot dish where thinly sliced meat and various vegetables are cooked in a boiling broth at the table. The name "shabu-shabu" comes from the sound the ingredients make when swirled in the pot. The meat used in shabu-shabu is typically beef, although pork and chicken are sometimes used as well.
Shabu cuts are sliced very thin, usually between 2-3 millimetres, to ensure they cook rapidly in the hot broth; Yakiniku cuts are usually thicker than shabu-shabu cuts, typically around 3-5 millimetres, to allow for grilling without overcooking.
Both shabu-shabu and yakiniku offer unique dining experiences where you can savour the flavours of different cuts of meat, either by boiling them in a flavourful broth or grilling them to perfection at the table.
